Nestled in the heart of Rexburg, Idaho, Taqueria El Rancho delivers an authentic taste of Mexico that feels like a culinary homecoming. Specializing in vibrant Mexican cuisine, this beloved eatery is famed for its rich, flavorful dishes and a dining experience that is as unique as its menu.
The moment you step into Taqueria El Rancho—familiarly known to locals as the "taco bus"—you’re embraced by an atmosphere that’s casual, warm, and inviting. Imagine savoring your meal inside a charming retro school bus, adding a playful yet cozy backdrop to a truly satisfying dining adventure. It’s not haute cuisine, but it’s real, heartfelt Mexican food crafted with passion and expertise, where each bite tells a story.
When it comes to the food, the menu is a treasure trove for any Mexican food aficionado. The 4 Tacos Cabeza stand out as a must-try; tender, slow-cooked beef head meat wrapped in soft, warm tortillas, bursting with deep, savory flavor enhanced by fresh cilantro and zesty onions. The Macho Burrito is another fan favorite—generous, hearty, and loaded with perfectly seasoned beef steak meat that melts in your mouth. Their Cochinita Pibil, marinated pork simmered with citrusy and earthy spices, offers a vibrant contrast of textures and tangy undertones that linger delightfully. Don’t miss the classic Tacos Rice & Beans, a comforting staple elevated by authentic seasoning that strikes a perfect balance between simplicity and taste.
This spot also shines with its variety of traditional dishes like Tortas Al Vapor De Cabeza, Quesadillas, Huarache, and the sumptuous Carne Asada—grilled with precision and served with fresh salsas that awaken the palate. Customers often rave about the freshness of ingredients and the generous portions that satisfy cravings without emptying wallets.
To quench your thirst, Taqueria El Rancho offers an inventive array of drinks, from classic Jarritos in vibrant flavors like Pineapple, Tamarind, and Sangria, to traditional aguas frescas and familiar favorites such as Coke or Monster energy drinks. This thoughtful drink selection perfectly complements their food’s bold flavors and makes for a refreshing pairing.
Patrons like Gary Weller appreciate discovering hidden gems like this, citing the excellent flavor and texture of the tacos and burritos at a very reasonable price. For long-time fans such as Thomas Chambers, it’s the absolute gold standard for Mexican food in the area, something against which all others are measured. Meanwhile, Joshua Call praises the fresh cilantro, onion, and salsas that elevate their carne asada and adobada tacos beyond the ordinary.
Whether you’re chasing nostalgia, craving comfort, or simply in search of honest, crave-worthy Mexican fare, Taqueria El Rancho offers a memorable dining journey that feels both genuine and satisfying. This isn’t just a meal—it’s a celebration of flavor, culture, and community, all served up with a friendly smile inside Rexburg’s charming taco bus.
I love exploring hidden gems like this. We had a few different tacos and the mini burrito and each had excellent flavor and texture for a reasonable cost.
Love the atmosphere of eating in a bus. Authentic Mexican made by Mexicans. Very friendly family that serves good food. Definitely the place to stop in this town for the full experience. It's not fine dining, but what did you expect from a bus. ;)
Great carne asada and adobada tacos. They weren’t skinny like some other restaurants. Fresh cilantro, onion and salsas. I’ll be back!
Best. Tacos. Ever. I was one of the first customers while a student at BYU-Idaho. I compare all Mexican food to this place and nothing has come close. Never change Taqueria El Rancho!
Locals call this place "taco bus." We've come here for years and the food is high quality, delicious, and quick. It's not my favorite place for Mexican in Rexburg, but you can't beat the price. Plus, it's always fun to go eat in an old school bus. They have green and red salsa for you, but you have to ask.
This is my favorite Mexican restaurant in Rexburg/Idaho Falls. The prices are amazing and the food is so delicious! I highly recommend eating here. My favorite is the Macho Burrito with Carnitas…. All I can say is Yummy
My wife and I went here for the first time. The food is great and great customer service. There was a nice little restaurant out of the bus had seating inside. It was a good Price and a great tasting. We would highly recommend if you’re looking for some good home. Cooked tacos, and burritos to go here.
The Carne Asada tacos are the best ones to have! The Carnitas are also good. The tortillas are perfectly prepared.
